Vegetarian Moroccan couscous

Vegetarian Moroccan couscous

1 box of Moroccan couscous ( whole wheat is better)
1 box of chicken stock ( vegetable if vegetarian)
1 small green squash (diced)
1/2 cup baby carrots
2 small red potatoes (diced)
1 tomato cut in half
1 medium onioin diced
1/2 cup of canned chick peas ( drained)
1 cup of diced pumpkin
1/2 cup diced turnip
1bouquet garnit ( parsley and coriander)
1 cube vegetable bouillon
1 tea spoon fresh ground pepper
1/2 tea spoon ground ginger
safran ( you can use Ground Turmeric if you can't find safran)
2 table spoon of olive oil.

Cook the couscous in the stock as indicated in the box. let aside.
in a big pan , put all ingredients together, add spices and the olive oil over medium heat...cover with water and let cook 15 to 20 mn until the vegetables are cooked but firm to the touch.
for plating, put the vegetables over the couscous and some of the stock to moisten the couscous.
PS: you can add chicken or veal to the couscous to make it a non vegetarian dish.
